A sculptural maitake mushroom over a crisp jade-green rice cake, finished with ginger-scallion oil and pickled Asian pear.
Original series concept · Recipe development proposedA whole mushroom becomes the centerpiece. Fragrant tea, a crisp rice base and a sharp pear garnish bring aroma, structure and brightness to one plate.
The proposed home version would roast the mushroom and introduce the tea through a simple sauce, preserving the idea without specialist smoking equipment.
