    Wash the produce. Shave the fennel, peel and segment the orange, and finely chop the dill.

    Mash the white beans with olive oil, lemon juice and black pepper until spreadable, leaving a little texture.

    Toast the bread. Spread each slice with beans, then add the drained, ready-to-eat canned sardines. Keep their soft edible bones if comfortable; these are part of the calcium contribution.

    Top with fennel, orange and dill. Serve promptly on a platter with extra lemon.

For a gathering, cut each toast in half and arrange on a narrow platter.

Make the bean spread ahead and chill. Toast and assemble just before serving so the bread stays crisp. This recipe contains rye and wheat gluten.
