Original series concept · Recipe development proposedFrench sauce work and pastry set the direction: crisp, finely layered pastry around tender barigoule vegetables, with a smooth pea velouté spooned around the tart at the table.
The proposed home version would use prepared pastry and a straightforward pea velouté while retaining the Provençal aromatics, fine herbs and elegant French presentation.
